Looking for a versatile spice mix? Well, that's exactly the definition this favorite BBQ seasoning of mine fits.
I really love spices and there are really just a few meals that I season just with salt and pepper in my kitchen. Especially in the summer when everywhere are fragrant fresh herbs like rosemary and thyme. But in the cold months, I appreciate the benefit of dried herbs and various warming spices. So for me, winter is the best time of year to create different spice blends, like this BBQ style dry rub!
Maybe it's not the best to write it in August when it's 30 degrees outside but whatever, I just ran out of this BBQ seasoning and it's barbecue season! So I'm going to make a jar to stock up again... and hopefully it will last me until winter.

What is dry rub?
Dry rub - or dry seasoning mix is primarily meant for seasoning meat. The mixture is rubbed into the meat, left to rest (ideally in the fridge until the next day) and then grilled. The advantage of dry rub is that the meat is perfectly seasoned, but there is no need to marinade it with oil, which then drops into the coals in the grill.
Making a dry rub seasoning mix is a very simple thing to do. Mix together a bunch of spices, herbs, salt and sugar in a bowl and you can rub the mixture straight into the meat for grilling. Or put it in a jar and use it whenever you feel like it! (See my TIPS below)

The combination of spices, herbs and sugar creates a burst of flavor and adds a lot of deliciousness to your meal. And yes, I often grab a jar of this BBQ seasoning mix when I'm not sure how to season my meal, because it's just SO versatile and goes with anything and everything!
Do you find it strange that brown sugar is added to the mix? It seemed weird to me at first either. I've always made my seasoning mixes with just dried herbs and spices. But the sugar has a really unmistakable part in the case. When grilling, the sugar starts to dissolve and caramelize , giving the dish a delicious bitter-sweet taste, just "something extra"... another layer of flavor, may be?
Why make your own homemade BBQ seasoning mix?
Making homemade seasoning blends is the best! You know exactly what's in the mixture and you can create a blend exactly to your liking.
Store-bought pre-packaged seasoning mixes are often full of unnecessary additives and salt and can also be very expensive. With homemade ones, on the other hand, you can also add various spices that you often have on hand and don't know what to make with them. Like coriander seeds or cumin seeds. Don't tell me I'm the only one with three open packets of the same spice at home...

How to use homemade BBQ seasoning mix?
Did I mention how versatile this blend is? By making the seasoning free of paprika (which always colors the meal) it can really be used in everything! Anyway, the important thing is. that the seasoning mix should go through the sugar caramelisation stage. That is to say, it must be exposed to a higher temperature. That's why it's most useful if you add a few teaspoons into the base of the dish.
My favorite uses for this homemade BBQ seasoning mix: BBQ kořenící směsi patří:
- seasoning tomato sauces and chili con carne (in this case I also add ground paprika to the base),
- in BBQ style beans,,
- of course, in my delicious homemade BBQ sauce, (coming soon to the web)
- Massaging it into larger cuts of meat before grilling (it's unbeatable with beef),
- in meat burgers, meatballs and meat mixtures,
- in marinades for vegetables and tofu, along with a good olive oil,
- in the bases of various soups (bean and Tex-mex soups, onion soup, goulash soup,,..)

How to make my homemade BBQ seasoning mix?
Grind the whole spices (cumin, pepper or coriander) in a coarse spice grinder. Of course, you can also use a mortar and some hand power. Mix the ground spices in a bowl with the sugar, salt, onion and garlic powder, oregano, chili powder, thyme and any other ingredients. Stir the mixture well and transfer to an airtight container.

How long to store the homemade BBQ seasoning mix?
The mixture is best freshly prepared and with the freshest ingredients. This is what gives it its special aroma. Especially if you grind the spices yourself at home. I make my own BBQ seasoning to to stock up, though! In a jar with a lid, it lasts fresh for half a year and tastes great.
TIPS:
- you can also add 1 tbsp of ground paprika, but with paprika every meal turns into red
- you can be creative with this BBQ seasoning mix and add other spices to your liking... ground ginger, ground rosemary, Szechuan pepper or ground dry tomatoes would be great

Homemade BBQ seasoning
Ingredients:
- 2 tbsp of cane sugar
- 1 and 1/2 tbsp sea salt
- 1 tbsp black peppercorns
- 1 tbsp cumin
- 1 tbsp ground coriander seeds
- 1 tbsp onion powder
- 1 tbsp garlic powder
- pinch of chilli
- 1 tsp dried oregano
- 1 tsp dried thyme
- pinch of ground bay leaf or ground cloves (optional)
Instructions:
- Grind the whole spices in a coarse spice grinder.
- Mix the ground spices in a bowl with the rest of the ingredients and transfer to an airtight container. This homemade BBQ seasoning mix will last for up to six months in optimal conditions.
