I don't know anything easier and at the same time as satisfying as making your own seasonings! Seriously, just mix a few spices and you have something completely new, unique and flavorful to spice up your everyday cooking. Because what most of us want is to cook quick, healthy and delicious meals that will please the whole family. And that's exactly what spice blends can help with! 

I don't know about you, but I'm all for making things as easy as possible in the kitchen. Whether it's baking with sourdough starter, using seasonal ingredients, easy meal prep, or making spice blends! I've featured my favorite Homemade BBQ seasoning. It's kind of my secret weapon when I need to add a lot of flavor. But it's not suitable for absolutely everything! So because of that, I created this second secret weapon. This spice blend for chicken, and it is, dare I say, pretty awesome.

What is the difference between my BBQ seasoning and poultry seasoning?

My homemade poultry seasoning only consists of different spices mixed with salt, whereas in BBQ seasoning mix the presence of cane sugar is very important! Because of this, each mixture has different properties and so their use is different. Each also contains different spices and in particular the BBQ seasoning mix is dominated by roasted cumin and black pepper. In the poultry seasoning you will find a perfectly balanced flavor of spices , which enhances the natural flavor of the food and adds a beautiful golden color. And although there are quite a lot of spices in this blend, in the end its use is almost universal.

What does this homemade poultry seasoning contain?

So let's find out what this mixture consists of and what all we will need!

  • salt - Salt forms the base of the mixture and it is also there proportionally the most . I use fine sea salt, but regular kitchen iodized salt or even Himalayan salt works great too, as it also adds a more interesting color.
  • ground paprika - Adds a beautiful color to the spice mix. I use ground sweet paprika, because it has a mild flavor and doesn't overpower the rest of the spices. However, for lovers of hot flavors, feel free to substitute partially or completely with ground chilli peppers
  • turmeric - Almost miraculous and bright yellow spice, that provides a lot of antioxidants and health benefits along with its color. Turmeric is especially beneficial for the function of the digestive system and the immune system, especially when combined with pepper.
  • granulated onion - My very favorite ingredient in any spice mix! It adds an unmistakable sweet flavor and supports digestive system function and enzyme production.
  • granulated garlic - It adds a garlicky flavor to the seasoning mix, without using fresh garlic! Which certainly has many advantages, as garlic is extremely healthy.
  • ground coriander - Most commonly used in curry mixes and exotic dishes. It also makes the best punch and also spice mixes as it adds a sweet taste and irresistible aroma!
  • ground ginger - Ginger, like coriander, has a wonderful slightly pungent aroma and sweet taste. With this ground spice, it makes a big difference whether you use fresh or older spices. That's why, with ginger in particular, I recommend using the freshest package you can get.
  • dried basil - I love the combination of turmeric and basil, so it can't be missing in this mix. In addition to the great aroma and flavor, it also gives the spice blend a coarser texture that just looks AMAZING.
  • pepper - And you know what else I love? White pepper!! And by the way, it complements turmeric because it boosts its effects on the digestive system. And if you can't get white pepper, put black pepper in there.

How to use this homemade poultry seasoning?

This seasoning is absolutely perfect for flavoring white meat, such as chicken, turkey breast, rabbit or fish such as cod or pangasius. But it's also great on vegetables, especially carrots, squash or sweet potatoes, or on grilled cheese.

When used, the poultry seasoning can be added straight to the pan, where you are roasting the meat. Since it contains salt in which the spices are mixed, it can spread the spices and also the flavor evenly. Because as we probably all know, when we throw the spices themselves on the meat, they often form clumps in just a few places and the rest of the ingredients in the pan remain flavorless. So you don't have to worry about that with this mixture!

The best way to use is to add the spices to a marinade, which can be oil or yogurt based, and let the meat marinate overnight in the fridge. How to make homemade poultry seasoning?

Simply mix the salt and all the spices in a large bowl. A large tablespoon and teaspoon is all you need for measuring, and depending on how much seasoning you want to make, use either heaped or level tablespoons. I measured with heaped tablespoons and came up with about 120g of mixture that fit into a 100ml jar. 

How to store this homemade poultry seasoning?

Store this homemade poultry seasoning in an airtight container. Various small glass "jars" look lovely, but plastic containers or just any jars serve just as well! Store ideally in a dry environment so that the salt does not get wet.

TIPS:

use a spoon to scoop out the seasoning, as the remaining mixture often comes into contact with the steam unnecessarily, which affects its quality
- if you don't like basil, you can also use finely crushed caraway seeds - but I recommend to not substitute other spices, because it's just "not the same"
- this spice mixture can last for up to a year if stored properly, so it's a good idea to make a larger quantity of the mixture for stock and always have the spices on hand

Homemade poultry seasoning

Ingredients:

  • 2 tbsp sea salt
  • 2 tsp ground sweet paprika
  • 2 tsp ground turmeric
  • 2 tsp granulated garlic
  • 2 tsp granulated onion
  • 1 tsp ground coriander
  • 1 tsp white pepper
  • 1 tsp dried basil

Instructions:

    1. Mix all ingredients and put in an airtight container. Use the seasoning either to the marinade with oil or directly for seasoning during cooking.
