Sourdough cheese waffles

Crispy waffles with the aroma of herbs and the amazing taste of cheese you will want to make every day.

I have to say that this is a really simple recipe that only requires a few ingredients! I love quick and easy recipes that are full of flavor and can be used in multiple ways, and these sourdough cheese waffles meet all of those requirements! It's one of my favorite recipes in the summer when it's hot outside and I don't feel like heating up the oven for baking bread, but also now in the fall when a hot waffle iron warms up my kitchen at least a little in the morning while making breakfast.

The great thing about sourdough waffles with cheese is that they cook very quickly! If you know my recipe for sourdough pancakes, which are of course absolutely perfect, you probably already know that you can also get them on the table really quickly, making for a stress-free breakfast. After all, there's nothing worse than standing over a pan full of pancakes or a waffle maker and convincing them to cook faster while your kids are starving and crying behind your back.

What to serve savory sourdough cheese waffles with?

The magic of these savory waffles is that they taste good with almost anything! Take a look at my favorite ways to use them:

  1. As a crunchy addition to soup instead of bread - just imagine, you have a delicious creamy soup that you just cooked for lunch and you want something crunchy to go with it, but you don't have bread for croutons left - cheese waffles will wonderfully substitute the crunchy element and you'll have them ready before the soup even cools enough to eat!
  2. They make perfect sandwiches - I don't know a faster sandwich than one made with waffles! Especially in the summer, they are one of the quickest lunches! Just put some fried bacon, lettuce, sliced tomato from the garden and some dressing on a waffle, top it with another waffle and you have a PERFECT LUNCH!
  3. How about trying open-faced sandwiches? - Oh, how I love these waffles for breakfast! While they are cooking in the waffle maker in the morning, just quickly sauté any veggies in the skillet. Mushrooms, spinach, zucchini slices with herbs, or regular carrots and leeks are great! Then just pile the seasoned veggies onto waffles, drizzle with chili sauce and you have the ultimate morning kicker!
  4. It's great paired with eggs - similarly, you can eat eggs with waffles, along with vegetables or even baked ham. Top crispy waffles with scrambled eggs and bacon, fried eggs, poached eggs or a nicely arranged omelette. And you've never had anything like this before? You'll be amazed after the first bite!

What to flavor sourdough cheese waffles with?

Sourdough waffles have a relatively neutral taste , and will probably remind you of a cheese cracker. They taste great with Italian-style dried herbs, and of course, if you choose a strong cheese, you'll get a kick out of it too! It's a simple flavor combination that goes with almost anything, but if you like to experiment, it works absolutely great with these waffles! 

You can add a lot of good things to waffles, but I would stay with two components at most though. Try adding:

  • HERBS - instead of Italian spices you can add Provençal mixture, basil, thyme, rosemary and even crushed, or blends of curry spices, crushed cumin, granulated garlic, granulated onion and even beautiful yellow turmeric
  • CHEESE - you can either omit the cheese altogether or experiment with what you have at the time, just keep in mind that cheeses that you can grate well and melt well works best. So generally any hard cheese, whether cow, sheep or goat. Blue cheeses, gorgonzola, parmesan or feta are also excellent. With some cheeses you will of course need to put a little less cheese than is written in the recipe!
  • FRIED GOODIES - fried pieces of bacon, ham or onions will be the absolute perfect addition to these savory waffles!
  • FRESH VEGETABLES - if you chop or grate the vegetables really finely, you can also add them in small amounts to the batter, making them even healthier. How about trying spring onions, a piece of zucchini, peppers or tomato flesh?
  • DRIED FRUIT - last but not least, dried fruit can also be added right to the batter. Don't forget to chop them very finely again! Dried fruit goes surprisingly well with cheese, and combinations of blue cheese and dried cranberries or goat cheese and dates are a delicious treat!

How to make savory sourdough cheese waffles?

For this recipe we need a wheat sourdough starter. Here you have 2 options when preparing:

  1. If you use the same method of maintaining and feeding the sourdough starter as I do, make sure you have at least 1 cup of sourdough starter (it doesn't have to be active)
  2. or make your starter in a bowl (like a levain) - about 8-12 hours before baking, mix 120g wheat flour + 120g water +1 tbsp sourdough starter in a bowl and leave covered to ferment.

When you have enough starter, you can start mixing the batter for the waffles . In a large bowl, just mix together the sourdough starter, salt, herbs, baking soda, egg and whisk along with the melted butter (or you can use coconut oil). At this stage the batter will start to make bubbles, which is due to the reaction of the sourdough starter with the baking soda.

Finally, carefully stir the grated cheese into the batter (it can be grated coarsely or finely) and try not to overmix the batter to avoid destroying the bubbles. The dough is easier to work with when it is bubbly.

Preheat your waffle maker and put about 2 tbsp of batter on each waffle. Fry the waffles for a few minutes until golden and let them cool a little on a wire rack. The waffles become even firmer and crispier as they cool.

How to store savory sourdough cheese waffles?

These sourdough waffles are best made fresh, but can be baked to stock up! Just transfer the completely cooled waffles to a plastic box or resealable bag. They will last about 5 days in the fridge and about 1 month in the freezer. To reheat, just put the waffles in a hot waffle iron for a while or toast them in a toaster.

TIPS:
- for the sourdough starter (or levain), I recommend using plain wheat or spelt flour in combination with whole wheat flour (50:50)
- if you don't have a waffle maker, try making the dough into savory pancakes (blini) or bake it in a sandwich maker!
- you can also make healthier waffles by adding ground seeds such as flax, chia or sunflower seeds

Sourdough cheese waffles

Ingredients:

  • 240 g wheat sourdough starter
  • 1 large egg
  • 1/2 tsp of salt
  • 1/2 tsp Italian seasoning mix
  • 1/2 tsp baking soda
  • 40 g butter, melted and slightly cooled
  • 60 g grated cheese (eidam or gouda 40% t. v s.)

Instructions:

  1. In a large bowl, combine the sourdough starter, egg, salt, herbs, baking soda and stir in melted butter. 
  2. Lastly, add the grated cheese to the mixture and stir gently. 
  3. Fry the waffles in a hot waffle maker until crispy. You will need about 2 tbsp of batter per waffle.

Note: Waffles cook quickly and become even crispier as they cool.
