Homemade honey mustard

The best dressing for all your spring salads!

You only need a few ingredients for this dressing and it's ready in five minutes. And that includes making homemade mayonnaise, if you like! Mustard-honey dressing will make any salad an irresistible meal! But you don't just have to use it in salads. It also works great as a topping for wraps or tortillas, or take it to the barbecue this season! In fact, it also goes well with any grilled vegetable that has a piece of perfectly cooked meat on the side!

When it comes to a good dressing, I usually do the simplest - a little olive oil, balsamic vinegar, salt, pepper and a drizzle of maple syrup, but not in spring! Spring is full of completely different flavors! Along with spring comes my favorite season full of fresh, crunchy vegetables and varieties like radishes, arugula, lettuce and kohlrabi, and these are just begging to be paired with something more bold, decadent and absolutely delicious! And so, in our house, every spring I make a good amount of this mustard-honey dressing.

In the everyday running of our kitchen I never measure this recipe, I just kind of mix it up until the dressing tastes the way I want it to. However, I found the perfect ratio specifically for the purposes of this post and it is anything but simple! And I have to say, from now on, I'll probably start measuring the next time I make a batch, because it's PERFECT!

What ingredients do we need for the honey mustard dressing?

  • mustard - mustard sets the main flavor tone of the dressing, so depending on how good the mustard you use, the dressing will taste good too! Some of my favorites include dijon mustard, classic full fat and even combined with coarse grain mustard - please feel free to experiment!
  • honey - honey sweetens the dressing and mellows out the hotness of the mustard. Use a nice dark honey that is flavor neutral. In addition, the darker color of the honey will add a nice color to the dressing too. You can also substitute honey for maple syrup, coconut syrup or dark agave syrup.
  • mayonnaise - I most often use a good store-bought mayonnaise, but you can use homemade mayonnaise as well (you can find a recipe for homemade mayonnaise in the exact quantities for this recipe further down in the TIPS section).
  • sour cream or yoghurt - I add dairy products to the dressing to lighten and cream it. With sour cream, the dressing will be beautifully decadent and the yoghurt will make it pleasantly refreshing. Instead of sour cream and yogurt, you can add extra mayonnaise!
  • salt - fine sea salt or Himalayan salt is best
  • pepper - you can experiment with different types of pepper in this dressing. In addition to black pepper, you can add finely ground long pepper, Sichuan pepper or even flavored types of pepper (lemon, orange).
  • lemon juice - a little lemon juice will make almost anything better! I add it to the dressing to freshen it up, and if you want to make this dressing even MORE better, add a few grates of lemon zest too!

What else can be added to the mustard-honey dressing?

Honey mustard dressing is absolutely great on its own, but if you want to spice it up even more, it's great to use herbs! If you have fresh herbs like oregano, tarragon, thyme, chop them finely and stir them into the prepared dressing. Fresh dill -is also a great flavor match for the dressing. And if you haven't tried it yet, mustard-honey dressing with dill is the best partner for smoked salmon!

My favorite? A wrap made from my sourdough tortillas! Just add smoked salmon, arugula, cucumber, and tomatoes to the wraps. Drizzle with mustard-honey dressing and add an extra squeeze of lemon juice! Yummy!

How to make homemade honey mustard dressing?

In a bowl, mix mayonnaise, yoghurt or sour cream, mustard, honey, salt, pepper to taste and a teaspoon of lemon juice. Ideally, mix with a whisk to aerate the dressing. If you have honey that is solid, warm it slightly in a saucepan before using to help it combine with the other ingredients. 

This dressing will keep in the fridge for about 5 days.

Put 1 egg yolk, a little vinegar or lemon juice, a pinch of salt and pepper in a bowl. Mix the mixture with a whisk and then add the oil drop by drop (about 50ml in total).

Homemade honey mustard

Ingredients:

  • 1 tbsp good mayonnaise
  • 1 tbsp sour cream or yoghurt
  • 2 tbsp mustard
  • 2 tbsp honey
  • 1/4 tsp salt
  • freshly ground pepper to taste
  • 1 tsp lemon juice

Instructions:

    1. In a bowl, mix mayonnaise, yogurt or sour cream, mustard, honey, salt, pepper to taste and a teaspoon of lemon juice.
    2. Place the dressing in the refrigerator for 30 minutes to chill.


      Note: If you have honey that is stiff, warm it slightly in a saucepan before using to help it combine with the other ingredients.
